Pumpkin soup is the soup of choice in our home (regardless of the season, the boys have been known to ask for pumpkin soup in the dead of an Australian summer)!
Now how do you make it even healthier without the kids knowing its full of the "good stuff"??
I have tweaked the Thermomix EDC recipe for the pumpkin soup by adding 1 roughly chopped organic sweet potato, a roughly chopped carrot & half a cup of red split lentils) and cook as per the recipe in the EDC.
It's lovely served with a spelt wholemeal sourdough and provides them with 3 serves of veggies and their protein from the lentils (and they don't even know it), it's also a hit with lentil hating husbands too! (Insert evil laugh here :) ) It's also very quick and easy to make making it irresistible!
