Cous Cous

Now with this recipe it's really based on personal taste as the choices are endless. Use failsafe sausages (these are preservative free) or roasted and flaked salmon, canned tuna etc.

For this dish I used

1/3 cup of corn cous cous (gluten/wheat & GMO free) soaked in 1 cup of boiling water in my thermoserver for 2 – 5 mins till all the water was soaked up. (Cooks in 8 mins the box says
1 x large sweet potato cut and steamed and then roasted in the oven till cooked (leave skin on if using organic sweet potato)
A handful of organic sultanas
A couple of organic apricots – chopped in small pieces
Herbamare to season
3 chicken failsafe sausages pan fried and cut up
Lemon juice to taste (you could use orange juice if your kids prefer this taste)
A handful of baby cherry tomatoes
Any herbs of choice ( I didn’t add any as I didn’t’ have any on hand)


1. Mix all the above together and season with the herbamare and lemon/orange juice depending on your tastes.




Another great version is Salmon (tinned or oven roasted) grated carrots, shallots, sultanas, roasted sweet potato & drizzled with good fat- chia oil. Fast, filling and so good for you! Good fats like chia, flaxseed oils etc are helping dramatically in Lachlan"s eczema and are great for the whole family. Please dont fear good fats!! PLEASE!!!
